Bacon and Egg Cups

Need a quick but nutritious breakfast on the run, or looking for something different to put in the lunchboxes?

You can’t go wrong with bacon and eggs right?

Here’s how to make these super easy to go snacks.

Ingredients

1 x packet of streaky bacon

1 x Dozen Free Range Eggs

Salt and Pepper

Method

Pre-heat the oven to 180 degrees C

use a 12 hole muffin pan spray really well with cooking oil

Place a strip of bacon in each hole to make a circle

Crack an egg into the middle of each circle

Sprinkle with a little salt and cracked pepper

Cook for 10 minutes or until you have the desired consistency of yolk and are cooked on the top.

 

Tips

  1. You don’t have to make 12 at a time, if you only want to make a few only make a few!
  2. I have read many recipes which tell you to cook the bacon first, drain the excess fat off then crack the egg into it. I found this wasn’t necessary the extra fat just added to the flavor and I can’t stand anything too finicky so I bypassed that step.

  1. I totally agree with you leaving the bacon fat in dose add to the flavour of the cups just dabbling them on paper towel b4 putting them on the plate removes the excess fat.

  2. I’ve been making these forever and have never pre-cooked the bacon. Just drain on a piece of paper towel before serving 🙂
