Sometimes its hard to find inspiration for the Christmas feast. Even harder to find simple but impressive ideas.

Salad Christmas Wreath

Here is an easy idea using Cherry Tomatoes, Mozerella Balls, a balsamic glaze and some Basil Leaves.
Salad Ingredients
4 Punnets Cherry tomatoes
.300grams Mozerella Balls
Handful fresh Basil Leaves (we happen to know an excellent grower)
2 TBSP olive oil
3 Tsp dried Italien herbs
Sea salt and groung pepper to season.
Balsamic Glaze
1 1/2 Cups balsamic vinegar
3 TBSP brown sugar
Method
Glaze – Combine the vinegar and sugar in a small saucepan. Cook while stirring over a low heat for 5 minutes or until sugar has dissolved. Increase heat to medium setting and bring to boil, reduce heat to low and allow to simmer for 10 minutes or until reduced by one third and thivkened like syrup.
Salad – Wash and dry the tomatoes and arrange on a large serving plate, drain the mozerella balls and arrange between the tomatoes. Drizzle with olive oil and season with herbs salt and pepper. Toss slightly. Garnish with the fresh basil leaves.
I reckon you could add olives too for something a bit extra or even those cream cheese stuffed jalepenos you get at the deli to spice it up!
Christmas Tree Salad

Ingredients
1 Bunch Kale sliced into ribbons (red or green)
Seeds from 1 medium pomegranite.
3/4 cup frozen red grapes
2 madarins or I orange peeled and chopped
1 small red onion
1/4-1/2 chopped nuts (walnuts/pecans/cashews/almonds)
2 TBSP dried fruit (cranberries/raisons)
1 small Apple chopped
Dressing (combine and shake)
2 TBSP Apple cider vinegar
1 Tbsp maple Syrup
1/3 Tsp salt
Black pepper
1/8 Tsp coriander
pinch of cayenne pepper
mmmm yummy! Not only do these look incredible they are super tasty and healthy too!
